Choc-Vocado Pudding
Ingredients
(2) medium size avocados
Cacao powder
(2) large mejool dates
Coconut water
Almond Extract
Shredded coconut
Cashews
Chia seeds
Blueberries, strawberries, raspberries
Directions
Combine skinless avocados, 2 ½ tablespoons of cacao powder, (2) large pitted dates, ¼ cup to ½ cup of coconut water (depending on desired texture), ½ teaspoon of almond extract and run on low in food processor.
After 60-90 seconds run on high until contents fully blended.
Pour contents into medium or large size bowl. You can store contents in refrigerator for 1-2 hours for additional thickness.
Add the fun toppings…blueberries, strawberries, raspberries, cashews (I ground mine up), chia seeds and shredded coconut.
