Ingredients
To Make the Cole Slaw
- 4 cups chopped raw broccoli
- 1 cup diced red onion
- ¾ cup raisins
- ½ cup raw sunflower seeds
To Make the Cashew Cheese Sauce
- 2½ cups raw cashews
- ⅓ cup apple cider vinegar
- 1 Tablespoon maple syrup
- ¼ cup lemon juice
- 1-2 Tablespoons pink Himalayan salt
- 1 Tablespoon black pepper
- 1½ Tablespoons minced garlic
- 1 Tablespoon garlic powder
- 1 Tablespoon onion powder
- 1 cup plant-based milk
Directions
- In a blender, blend all ingredients for Cashew Cheese Sauce until it has a hummus-like consistency.
- In a large bowl, combine sauce with broccoli, raisins, sunflower seeds, and onion.
- Mix until everything is covered in the sauce.
- Chill and serve!
