BEYOND BEEF NACHOS

Ingredients
- 16 oz (1 package) Beyond Beef®
- 1 tbsp. Extra Virgin Olive Oil
- 1 medium yellow onion, diced
- 1 tbsp. taco seasoning
- 1 tbsp. cumin
- 1tbsp. lime juice
- 1 tsp. lime zest
- 1 large bag tortilla chips
- 1 large tomato diced
- ¼ cup green onion
- ¼ cup cilantro
- 1 jalapeno thinly sliced, de-seeded
- Pinch of salt, to taste
- Pinch of pepper, to taste
- I cup queso

Directions
- Preheat oven to 425℉.
- Warm oil in a large pan, add onion, and cook for a minute. Add Beyond Beef® and cook for 2 minutes. Add taco seasoning, cumin, lime juice, and lime zest. Cook for about four more minutes.
- Assemble queso using the recipe by Minimalist Baker here.
- In a large baking dish, place tortilla chips and layer in beef. Add cheese. Bake for 10 minutes or so until chips are golden and crispy. Garnish with tomato, green onion, cilantro, jalapeno, salt, and pepper.
- Dig in!
