Clover Food Lab, Massachusetts’ cult-favorite for family-style fast food that turns meat eaters into vegetable lovers, invites the community to participate in an upcoming social media challenge this Earth Day, Thursday, April 22, 2021. The #CloverVeganChallenge, #KaleToAction, challenges community members to eat vegan for 24-hours. To coincide with the fun challenge, Clover Food Lab announces it will be generously revamping its existing Vegan Meal Box. Orders must be placed before 5:00 p.m. EST. Sunday, April 18, 2021, to guarantee pick-up/delivery for April 20, 2021.
The upcoming #CloverVeganChallenge, #KaleToAction, is the perfect way to celebrate Earth Day as eating vegan significantly reduces one’s environmental impact according to the 2018 study produced by the University of Oxford. To participate, Clover encourages the community to post a picture of their delicious vegan meals on Instagram with the hashtags #CloverVeganChallenge & #KaleToAction and tag Clover’s Instagram (@cloverfoodlab). Those who post the refreshed Clover Vegan Meal Boxes or their own vegan dishes with the proper hashtags will be entered to win a FREE meal box. All posts must be uploaded by 11:59 p.m. EST on Earth Day, Thursday, April 22, 2021.
The Vegan Meal Box Menu includes breakfast, lunch, dinner, snacks, and dessert options enough for two-four people, starting at $85.00. Although the minimum selection on the Clover website is two, that should not discourage individual folks from ordering the Vegan Meal Box for themselves! The meals are fresh and can be eaten over a few days. For breakfast, customers can enjoy overnight oats with Teddie Peanut Butter and house-made carrot-orange marmalade as well as Maine blueberry muffins. The lunch menu features ingredients to make the Clover classic chickpea fritter sandwich, a beluga lentil salad, a container of silky hummus, and famous pita bread. Then for dinner, customers can enjoy bangers, cabbage-and-kale mash and hearty vegetable stew. The bangers are made from Beyond Meat Original Brat sausages. The dinner also features a container of onion gravy.
On top of breakfast, lunch, and dinner, the Vegan Meal Box also comes with a snack and double desserts. The snack is Middle Eastern nachos with a spiced chickpea tomato sauce, Impossible Meat kofta crumbles, raisins, toasted pumpkin seeds, and topped with a lemon-turmeric drizzle. Finally, for dessert, the box includes two sweet treats – pistachio halva and apple mousse. Vegan desserts sometimes get a bad reputation for being too dry, but these delicious desserts are here to quickly change that misperception.

The Spring Meal Box includes three entrees, a carrot sandwich with farro, lemon, and feta salad; a local pesto pasta with roasted and pickled radish; as well as a farro mushroom soup with farm salad and Romesco sauce on pita bread. It also comes with Spring Dug parsnip fritters for a snack and shortbread with lavender sugar and pistachio halva for dessert. All are made with local ingredients from various farms and vendors around New England including Brookford Farm, Winter Moon Roots, RI Mushroom Co, Seven Hills Pasta Co, Maine Grains, and more.
