Dallas’ 1st 100% vegan authentic Italian ghost kitchen, N.D.A. Cuisine, which precisely means ‘No Dead Animals’, hosted their first sit down 8-course dinner last night, July 16th, where they served Raviolo Al Uovo.
N.D.A. Cuisine is usually a ghost kitchen that serves take-out style food from a multi-kitchen space called Taste of Towerwood in Farmers Branch, Dallas, Texas. The owner and head chef Cici Voise hails from a rich French-Italian heritage, where she learned the skills of making pasta from scratch from childhood.
Since going vegan over a decade ago, Cici made sure she could still enjoy and serve her favorite Italian dishes using all plant-based ingredients. She was able to figure out how to replicate the same flavors and textures of the most authentic sauces, pastas, and meat-alternatives. N.D.A. Cuisine’s menu consists of classics like Bolognese, Caprese, Gnocci, and even Tiramisu!
Cici shared with us that when she was designing the menu for their very first 8-course dining experience, which they hosted in another Dallas local vegan restaurant, TLC Vegan Kitchen based in Richardson, TX, she wanted a one-night only menu where the guests could taste a special menu outside of her everyday menu.
Among the 8-courses, N.D.A. Cuisine served a fully plant-based, hand-made meny that included a standout item: Raviolo Al Uovo. This dish originated at Ristorante San Domenico in Imola, Italy, which is in the Emilia-Romagna region near Bologna, Italy. This is a 2 Michelin star restaurant, and was featured on the hit show, No Reservations with Anthony Bourdain. But it was never made vegan until Chef Cici swapped out the animal byproducts for vegan alternatives!
N.D.A. Cuisine’s home made giant ravioli was filled with the traditional ricotta and spinach cream and encased a runny “egg yolk” made entirely from vegan ingredients. It was all topped off with sliced black truffles and a vegan butter emulsion, proving to be quite the decadent treat for all of the guests at the special dinner.
