Swiss Chard Tart Quinoa Crust

Ingredients

  • 2 cups Cooked Red Quinoa 
  • 1 bunch Swiss Chard (cleaned with vein out and medium dice) 
  • 1 each Onion (medium dice) 
  • 2 tb Fresh Garlic (chopped) 
  • 2 tb Shallots (chopped) 
  • 1⁄4 cup Egg White substitute- aquafaba 
  • 1 tb Brewers Yeast Flakes 
  • 2 tb Soy, Rice or soy/vegan Mozzarella 
  • 2 tb Olive Oil 
  • TT White Pepper and Sea Salt

Directions

  1. Place olive oil in a pan
  2. Sauté onions until clear about 1 minute
  3. Add shallots and sauté for 1 more minutes
  4. Add garlic for 30 seconds 5. Add Chard
  5. Sauté until soft about 5 minutes
  6. Place in a bowl
  7. Season to taste with sea salt and white pepper
  8. Add remaining ingredients
  9. Spray a tart shell with olive oil spray
  10. Press quinoa in shell and pre-bake in an oven at 350° for 15 minutes
  11. Add chard filling and bake about 30 minutes
