Baked Tofu Nuggets with Ranch Dip

Ingredients
Marinade Ingredients:
- 1 container extra firm tofu, pressed(15.5 oz)
- 2 teaspoons neutral-tasting oil
- 1 tablespoon lemon juice
- 2 teaspoons vegan Worcestershire sauce or coconut aminos
- ½ cup almond or oat milk
- ½ teaspoon sea salt
Coating Ingredients:
- 1/3 cup breadcrumbs or fine cornmeal
- 1/3 cup organic flour or oat flour
- 1 teaspoon evaporated cane sugar
- ½ teaspoon garlic powder
- ½ teaspoon sea salt
- ¼ teaspoon finely ground black pepper
- ¼ teaspoon dried parsley
- 1/3 cup Follow Your Heart Ranch Dressing
- 1/3 cup Original Vegenaise
Directions
- Pre-heat oven to 425 degrees.
- To bowl or baking dish add tofu, oil, lemon juice, Worcestershire or aminos, almond or oat milk and salt. Toss to coat.
- Set aside to marinate 10-30 minutes.
- In a separate dish combine breadcrumbs or cornmeal, flour, sugar, garlic powder, sea salt,pepper,and parsley. Whisk until uniform.
- Coat tofu in breadcrumb mixture and place on greased walled baking sheet. Spray or lightly brush with dash of oil. Bake for 10 minutes on the first side, and flip.
- Bake for about 7-10 more minutes. Whisk dressing andVegenaise and set aside. Serve warm with bleu cheese or ranch dip on side for dipping.
