Pear and Lemon Juice Kanten

Ingredients
1 l natural pear juice
1 lemon 100 g blueberries
100 g red currants
100 g blackberries
100 g raspberries
6 g agar-agar
5 edible red rose petals
50 g white almond paste
10 g agave syrup
Directions
Boil the pear juice with the agar-agar in a pot for 2 minutes and remove from heat.
Squeeze the lemon and add the juice to the pot, stir well and let cool without cooling completely.
Place the contents in a rectangular mold and place the berries so that they are separated from one another.
Place the mold in the refrigerator for 3 hours.
Afterwards, remove from the refrigerator and remove from the mold.
Place the almond paste in a bowl with the agave syrup, add two spoonfuls of hot water and whisk the contents.
SERVING THE DISH
Cut the kanten into 1 cm-wide rectangles. Place the rectangles on a glass plate in an interwoven pattern. Add three dabs of the almond sauce and the rose petals which have been cut à la julienne.
Recipe Note
This recipe can be made with any type of fruit juice and, in its savory version, with vegetable juice. For the berries to float, keep an eye on the temperature when preparing the juice: the juice must be starting to thicken.
