Spicy Peanut Noodles
Ingredients
• 2 7-oz bags Miracle Noodle Organic Spaghetti Style Shirataki Noodles
• ¼ cup PB2 (powdered peanut butter)
• 3 Tbsp coconut aminos
• 1 tsp agave nectar
• 1 tsp garlic paste
• 1 tsp sesame oil
• 1 Tbsp lime juice
• 2 tsp sriracha
• 2 Tbsp water
• ¾ cup carrot, grated
• ½ cup red bell pepper, chopped
• ¹/³ cup shelled edamame
• 1 cup red cabbage, finely chopped
• 2 Tbsp chives, chopped
• ½ tsp black sesame seeds
• Small handful cilantro, chopped (optional)
Directions
1. Drain and rinse spaghetti style shirataki noodles. Pat dry and set aside.
2. In a small bowl combine powdered peanut butter, coconut aminos, agave nectar, garlic paste, sesame oil, lime juice, sriracha and water. Stir well until smooth. Set aside.
3. In a large skillet over medium-high heat, add spaghetti style shirataki noodles, carrot, red bell pepper and edamame. Sauté 3-4 minutes or until vegetables soften.
4. Stir in peanut sauce and toss noodles until well combined. Cook 2 minutes until noodles absorb sauce and begin to look drier.
5. Add red cabbage, chives, black sesame seeds and chopped cilantro to the pan. Stir to combine and remove from heat. 6. Serve hot.
Recipe Note
The shirataki noodles sometimes have a strange odor right out of the bag. No fear! As soon as you cook them, it goes away
