Swiss Chard Tart Quinoa Crust

Ingredients
- 2 cups Cooked Red Quinoa
- 1 bunch Swiss Chard (cleaned with vein out and medium dice)
- 1 each Onion (medium dice)
- 2 tb Fresh Garlic (chopped)
- 2 tb Shallots (chopped)
- 1⁄4 cup Egg White substitute- aquafaba
- 1 tb Brewers Yeast Flakes
- 2 tb Soy, Rice or soy/vegan Mozzarella
- 2 tb Olive Oil
- TT White Pepper and Sea Salt
Directions
- Place olive oil in a pan
- Sauté onions until clear about 1 minute
- Add shallots and sauté for 1 more minutes
- Add garlic for 30 seconds 5. Add Chard
- Sauté until soft about 5 minutes
- Place in a bowl
- Season to taste with sea salt and white pepper
- Add remaining ingredients
- Spray a tart shell with olive oil spray
- Press quinoa in shell and pre-bake in an oven at 350° for 15 minutes
- Add chard filling and bake about 30 minutes
