AUSTIN, TX., April 1, 2022 / SorBabes, the plant-based frozen dessert brand has announced the grand opening of Peckers, their first brick and mortar restaurant located in Austin, Texas. The restaurant is operated by the co-founders of SorBabes, Inc., Nicole Cardone and Chef Deborah Gorman, the duo says the concept was inspired by an existing franchise, “except without the boobs and beer.” laughs Nicole.
This new founded concept will offer an exclusive vegan menu, instead of ‘wings and beer’ Peckers will focus on plant-based bites and sorbet pops. The predominately male wait staff will be attired in uniforms that highlight the vegan symbol “V” and will show off the svelte physiques of the men. “We love how this concept can show off how a plant-based diet does a body good” says Nicole.
“We wanted the atmosphere to be fun and casual and the food to be extraordinary.” Explains Chef Deborah, “We have taken our recipes to the next level. Don’t expect your everyday ice cream shop or typical vegan lunch options like salad and cold press juice. Our sorbet pops are insanely delicious with juicy melt in your mouth sorbet that is dipped in a creamy shell with crisped quinoa, and our vegan dishes are just downhome good southern cooking, everything on the menu is sure to please vegans and non-vegans alike.”
For a sorbet brand that was founded on flavor, making the first frozen desserts out of pure nut butters and real fruit, the SorBabes are known for their innovation and risk taking. “We know there may be some initial backlash at the concept,” says Nicole “but we know once the customers experience it first-hand they will be coming back and bringing their friends!”
While the SorBabes brand is growing strong in Texas, showcasing their boldly flavorful sorbet bars in HEB, the Peckers restaurant will truly cement the SorBabes enterprise in Texas. The focus in Texas is part of the brand’s future franchise development plans over the next few years, with a goal of opening five additional restaurants in Texas by the end of 2024.
