Texas welcomes a brand new, all-vegan food truck called Sunny’s Backyard-Austin’s latest plant-based pub and patio set to open soon on the east side!
Co-owners and wife/husband team Charrissa and Merritt Vaughn recently migrated “back home” to Texas by way of Los Angeles in 2020, having spent five years there bartending and later operating popular vegan bar, Beelman’s in downtown LA.
They were inspired by the creative plant-based cuisine options in LA, but wanted to come back to Texas, so they decided to leave Beelman’s and open Sunny’s Backyard in Austin instead.
Avid animal lovers, Merritt and Charissa named Sunny’s after their rescue terrier, and one of the outdoor bars will be named Huey’s Corner, after Sunny’s shih tzu brother.
Sunny’s Backyard is located at the previous Hard Luck Lounge, and is completing renovations now. In addition to an intimate indoor bar, they will also boast a 3,000 square foot dog-friendly patio, with seating for over 100 guests. With social distancing, initially seating will be more limited. Plans include outdoor entertainment and music when covid restrictions are lifted as well.
Their menu includes comfort food classics, like salted baked pretzels with a vegan cheese dip, with an upscale, plant-based twist, by adding Korean-fusion flavors like Gochujang Aioli for pretzel dipping as well!
Sunny’s will offer a variety of items alongside their pub pretzels, like banana peppers, portobello sticks, burgers, bulgogi tacos, and even vegan Spare Rib wraps! While they are awaiting TABC licensure, they will be giving away free beers to all visitors looking for a cold one to get that full vibe of a classic vegan pub!
